Sundays are Made For Zucchini Fritters

Happy Monday y'all. I hope everyone had a great weekend my weekend consisted of family time with my little cousins and Zucchini Fritters or Zucchini Pancakes as my 3 year old cousin says. These are so yummy and easy to make, plus....they are child proof. You know when a 3 year old likes them is because they are yummy. I decided to share with you my recipe. I had an extra zucchini from my zucchini muffins that i made last week and i said to myself i need to use it before it goes bad. I said to myself why not make them just as i make my hashbrowns instead of potatoes i use the Zucchini. Made them under 30 minutes used seasoning that i had in my patry and here they are. I think these will be my new guilty pleasure.

All you need is a large zucchini, grater, 1/4 cup meausure, 1tbsp measuring spoon, a bowl and a non stick pan. After grating the zucchini with the skin on. Place it on paper towel and squeeze the extra water out of the zucchini trust me if you don't do this you will have soggy fritters you don't want that. 

One large zucchini makes 2 cups exactly. Place it on a bowl and add one egg, and your favorite seasoning this is when you make it yor own recipe i had italian seasoning, garlic powder, salt and pepper. I also added 1/2 tsp of baking powder basically it makes them fluffy and 1/4 cup of whole wheat flour. If you have regular flour you can use that also and if you have self risen flour you don't need to add the baking powder then. Add 2 tbs of olive oil to a non stick pan and after is medium high heat take an ice cream scoop or spoon and place it on the pan you might want to spread them a bit. After 3 minutes on medium heat flip them over and wait until it browns well and place it on a paper towel that way it drys the excess oil. Trust me when i say these are addictive ! My family kept asking for more. Hope you enjoy them!

Easy Healthy Dinner !

Hello girls. I haven't been posting lately on my blog due to overload of work. When I get home all i want is a relaxing bath and bed. Thankfully I have a long weekend. I didn't have to work today nor Monday due to Labor day. When I am home I love to cook it is one of my hobbies that I have for the past years. I admit i was not a good cook but little by little I have learned. I am all for healthy, easy recipes that won't take too long to make especially on my free day. So today I decided to share with you my dinner. My camera was on my dining room and I said to myself why not share my recipe. so here it is Stuffed red peppers.

Fresh Organic peppers from the Farmers Market

93% Organic Ground Beef

Stuff the peppers with meat !

Dinner Is ready !

Recipe

 1 or 1/2 pound of lean ground meat. I used beef, but you can also make them with chicken or turkey.
  season the meat with garlic, salt and pepper to taste and a bit of lemon juice. 

 Preheat your pan on medium and add
1 tbs - Olive Oil 
add the meat and let it brown for 10 to 15 minutes then add 1/2 cup of natural tomato sauce or Pomi which is also natural tomato sauce you can get it at your near buy supermarket. let it simmer for another 15 minutes in total 30 minutes. 

Meanwhile preheat your oven to 350 degrees.

Then you will want to cut the top of your Peppers and deseed them. You can scrape all the inside with a small spoon. 

fill the peppers with meat and spray a bit of olive oil in the baking pan. Put it in the oven for 25 to 30 minutes.

And their you have the stuffed peppers. 

It's an easy recipe and also you can eat it how ever you want. I had  left over brown rice and avocado and decided to have it with that.
